TL;DRAbstract

Computer simulation of packaging and storage environments used for moisture-sensitive foods is described. The relationship between moisture sorption properties of foods, permeability of packaging films to moisture, and shelf life is outlined and modelling of shelf life prediction equations for specific conditions discussed in sections which cover: single unit packs under steady state storage conditions; multiple package systems under steady state storage conditions; bulking effect; and transient storage conditions of actual climates.
