TL;DRAbstract

This chapter summarizes the current evidence for the presence of Mycobacterium avium subsp. paratuberculosis (MAP) in animal-derived foods, describes the effect of various dairy processes on MAP survival and reviews the reservoirs of MAP infection in the environment and the various mechanisms that potentially aid its survival for long periods. The implications of MAP shedding by infected animals on food and water supplies are highlighted.
