The present project consisted on the design of an agro-industrial plant for the production of araza yogurt and burst amaranth seeds, in order to show the consumer an innovating product, by means of the incorporation of exotic flavors contributed by these products; by means of the investigation, development and application of GMP, the analysis and identification of CCP and a correct design of the plant and finally nutritious, with the development of a correct formulation of the product, based on the experimental design 2k and the nutritional factors of araza and the amaranth seeds. A market survey in the Ruminahui, County was also developed, with the purpose to determine the preferences of the consumers, as well as the acceptability that the product in the commercial sector would have, its buying potentials and the correct channels of distribution.
