TL;DRAbstract
Cassava crackers are foods favored by many people in Indonesia. The manufacturing process is highly dependent on the drying process especially in rain season. The purpose of this research is to design and determine the performance the rack type of dryer for drying cassava crackers. Drying machine designed with size of 150 cm (height) x 40 cm (wide) x 75 cm (length). The results shows that this dryer could reduce the moisture from 65% to 6%. The rime required for drying at temperature of 50, 60, 70°C are 12. 10 and 7 hours, respectively. The quality from this dryer is relatively same with the product dform the conventionally method of drying.
