TL;DRAbstract

The determination of metals in foods with high sugar has been an analytical challenge, due to interference of the matrix. Dilutions of the samples can minimize this effect, but may also reduce the concentrations of metals below the limit of detection. Thus pre-treatment is usually necessary to destroy or convert the organic matrix and extract the metal ions bounded to organic complexes. It is also desirable to use a procedure that minimize residuals in order to not affect the environment.
